Hot Smoked Recipes are prepared with precise proportions of individual meats, herbs, and spices. After allowing a short time to initiate the curing process, recipes are smoked at either very low temperatures (120-160 degrees F) for an extended period of time or higher temperatures. These recipes will vary in "smoky" flavor depending on type of smoking wood, amount of smoke, and longevity of the smoke.
