3 Cheese Sausage Pasta

What you need:
2 cups uncooked egg noodles
1 pound sausage
1 clove minced garlic
1/4 teaspoon ground oregano
pinch of salt and pepper
4 cups tomato sauce
1/4 cup sour cream
8 ounces each of your three favorite cheeses (make one cheese shredded)
Butter

How to prepare:

Boil the egg noodles until almost done. Drain and set aside.
Brown the sausage in a skillet over medium heat crumbling it as you go.
Add the garlic and let set for a minute or two. Drain.
Butter a 3 quart casserole and add the noodles.
Add 3 cups of the tomato sauce, one cheese, and the sausage.
Sprinkle the oregano and salt/pepper over the sausage.
Add the second cheese and 1 cup of the tomato sauce.
Place in a pre-heated oven at 350° for 20 minutes. Add the third shredded cheese and continue baking until the cheese on top gets gooey.

Hard Bottom Wakeup

What you need:
6 eggs
1 pound sausage
Butter
1 cup sour cream
1 cup dried breadcrumbs
1 cup shredded cheese
Garlic

How to prepare:

Boil the eggs, remove shell, and crumble.
Brown the sausage in a skillet over medium heat crumbling it as you go.
Butter a baking pan and layer the sausage and bread crumbs pressing flatly as you go.
Spread the sour cream on top and add the garlic.
Place in a pre-heated oven at 350° for 20 minutes. Add the shredded cheese and continue baking until the cheese on top gets gooey.

The garlic is optional. You can also substitue cream cheese instead of the shredded cheese.

 

Cauliflower Suprise

What you need:
16 ounces egg noodles
Cauliflower
Hot peppers
1 pound sausage
Butter
Garlic
Broth

How to prepare:

Boil the cauliflower and drain.
Boil the egg noodles and drain.
Brown the sausage in a skillet over medium heat crumbling it as you go. Add the garlic and continue cooking until garlic is golden. Drain oil and retain. Add the hot peppers to the mixture and allow to sit for a few minutes.
In a large pot add the broth (chicken or beef) and butter, stir in egg noodles and cauliflower and retained oil. Bring to a boil. Reduce heat and add sausage. Allow to simmer for at least 10 minutes. Remove from heat.

 

 

 

 

Sausage Sandwich

What you need:
1 cup onion
Hot peppers
1 pound sausage
Cheese

 

How to prepare:

Brown the onion and sausage in a skillet over medium heat crumbling them as you go. Add the hot peppers and continue cooking until mixture is golden. Add enough cheese to keep the mixture together forming a flat square as you go. Remove from heat when cheese is gooey.

Serve on bread like a sandwich. Add you favorite condiments if you like.
